Kurabies, is a kind of cookies with fresh butter, almond and icing sugar.
It is one the most popular festive sweet treat in Christmas period.
Greeks housewives used to bake amount of kurabies to offer them as present for the children, while they are singing the Christmas Carol .
350 unsalted cow butter
250 g fresh goat butter
130 g. icing sugar
1 kg of amerikan type flour
10 g baking powder
Seeds of 2 vanilla pods
30 ml of rose water
30 ml of Metaxa brandy
200 g. roasted almonds finely chopped
2 tbsp. orange zest
1 tsp. cinnamon powder
500 g sifted sugar icing
200 ml rose water and Metaxa brandly
A cinnamon stick
Preparation Time 60' Cooking difficulty: Medium
Sift the flour together with the baking powder.
In a basin combine butter, sugar, vanilla seeds, orange zest and rose water – brandy blend, until is homogenized. Pour mixture in mixer with dough cook attachment and beat it at medium speed(4-5)
Then increase the speed and continue for about 10 ‘until the mixture will be fluffy and white.
Continue adding sifted flour, almonds and cinnamon to our mixture, while we are beating it at medium to low speed, until the mixture is ready.
Pug the dough in small cookies or cut them in desired Christmas shapes.
Grease a non stick baking pan and place the kurabies- cookies inside them. Bake in preheated oven at 180o C for about 15 minutes until they have a light gold color.
Remove the cookies from the oven and let them cool for a while. Sprinkle them firstly with mixture of rosewater – brandy and after with icing sugar.
Also, an orange liqueur may be used instead of Metaxa – brandy or it may be replaced with rose water.
These cookies don’t get hard and keep for fresh for many days.
